Golden Apricot Buns

This recipe is perfect for anyone looking for a simple, quick recipe to make sweet, delicious buns. The nuggets of apricot add a lovely sweetness and a change of texture which adds to the flavour of the buns. What is also brilliant about these buns is that they are very healthy.

These buns were one of the first recipes I ever learned to make, and I have loved them ever since. It is a very easy recipe to follow and I would definitely recommend making this if you are relatively new to baking.


You can eat these buns plain, or you could add some butter and eat them like a scone.

 

Golden Apricot Buns

(Makes 12)


Ingredients:

· 220g Plain Flour

· 60g Granulated Sugar

· 120g Unsalted Butter

· 12 Dried Apricots

· 2 medium eggs


Instructions:

1. Preheat the oven to 180 degrees C (350 degrees F)

2. Add the flour and sugar into a large bowl and mix to combine.

3. Then cube the 120g of unsalted butter and add to the bowl. Rub the ingredients together until the mixture turns to fine breadcrumbs.

4. Chop the dried apricots into quarters and add into the breadcrumbs and mix.

5. Then pour in the beaten eggs and mix until the mixture forms a dough. If the dough is too sticky, add some more flour.

6. Weigh your dough and work out how heavy one bun should roughly be. Usually, the dough is around 600g so each bun should be 50g each.

7. Place the buns on a tray and bake for 8-10 minutes.


8. Leave to cool for 20 mins and then enjoy!
